Domaine Michel Martin, Chorey-les-Beaune, Burgundy - Michel and his wife Chantal jealously guard their limited supplies of Beaune 1er Crus but are currently expanding their holdings - exciting times!  Practicing viticulture intégrée means ploughing the soil instead of using herbicides for weed control and combining their low yields with no more than 20% new oak barrels preserving their wines fruit-forward characteristics.
