Paul Cluver Wines, Elgin South Africa

Set in a natural bowl to the east of Cape Town, this farm has a cooler micro-climate which allows the wine-making team at Paul Cluver to make delicate, elegant wines. The original focus on the farm was the apple orchards, but over the last 20 years this very much family focused business has developed 90 hectares of vineyards when it was identified as the perfect location for cool-climate viticulture.

While the philosophy is to enhance the rich and varied soil types to produce a unique character to the wines, the wine-making techniques used by Andries Burger are very much traditional. He has achieved wines which sit between the traditional style of the Old World, and the younger sometimes more overt style of the New World. The result is an excellent stepping stone for those who still feel a little nervous about the wines of the New World.
